Vegan Valentine's Day Heart Cookies Recipe

There'll be no broken hearts this Valentine's Day with these delicious vegan cookies! They are super easy to make and taste delicious.

I decorated mine with some vegan royal icing and silver sugar balls but you can let your creative juices flow and decorate however you like.

Recipe (makes 2 dozen small cookies)

Ingredients

160g all purpose flour
1 TBSP corn starch
1/2 tsp baking powder
1/4 tsp sea salt
90g brown sugar (another sugar will work)
90g vegan butter
1 TBSP unsweetened almond milk
1 tsp vanilla extract

Method

In one bowl, mix together flour, corn starch, baking powder in salt and sit aside
Beat together the sugar and butter in another bowl until smooth - I used an electric hand whisk for 2 minutes
Add milk and vanilla extract to the butter/sugar and beat for a further minute
Gradually add your dry ingredients into the wet mix, beating together slowly. You want your cookie dough to be soft but not sticky to allow for easy rolling.
Sprinkle flour onto baking paper and roll your dough out, leave it in the fridge for at least 2 hours to cool.
Remove dough from fridge, cut into desired shapes and place on a baking tray lined with baking paper.
Cook at 180°c for approx 12-15 minutes or until golden. (time could vary so keep an eye on your cookies)
Leave to cool and decorate as desired.
