Utilisé depuis plus de 2000 ans et original du sud-ouest, appartient à la famille du gingembre.
C'est l'ingrédient essentiel des plats indiens et du Moyen-Orient qui accentue la saveur et ajoute de la couleur à divers plats, en particulier le riz. Le goût terreux avec un trait légèrement amer et musqué, il libère un doux arôme terreux. L'un des principaux ingrédients du mélange de poudre de curry et du Ras el Hanout, il remplace souvent le safran car il donne également une couleur jaune, mais moins vive. On pense qu'il a de nombreuses utilisations médicinales, telles qu'aide à la digestion, antiseptique pour les coupures, les brûlures et les problèmes de peau. -
