Clearspring Bio-Balsamico-Essig wird von der Familie Mengazzoli in Modena nach einem jahrhundertealten traditionellen Verfahren hergestellt.
Dies beinhaltet die sorgfältige Auswahl der besten Bio-Trebbiano-Trauben an der Rebe, bevor der Saft sanft gekocht wird, um seine Essenz zu konzentrieren, ihn mit ihrem feinsten Weinessig zu mischen und die resultierende Mischung in Holzfässern zu reifen.
Zwischen verschiedenen Herstellern besteht eine freundschaftliche Rivalität bei der Wahl der Hölzer, die verwendet werden, um die Methode zur Reifung von Balsamico-Essig zu perfektionieren.
